The Indiana spirit is brewing in Bedford with a new coffee shop. Hoosier Bloom & Pastry offers coffee, breakfast, lunch and community, with an Indiana University ambience.
Madison Hettle and her fiancé, Zane Bobbs, opened the store June 20. Hettle loves making coffee and Bobbs loves making sandwiches. Bobbs is a life-long Indiana University fan and Hettle is from Bloomington. Combining their hobbies and pasts, they created Hoosier Bloom.
“It’s basically like all of our dreams put together,” Hettle said.
Red and white painted panels adorn the walls and IU memorabilia is spread around the store. In the fall, Hettle and Bobbs plan to show all the school’s football games at the store. They want to provide a place where people can go with their families to root for the Hoosiers.
“We’re trying to create a sportsy, but also really just relaxing vibe for people to come in and work on their computers and eat good pastries and good sandwiches,” Bobbs said.
In addition to coffee, they offer refreshers, sandwiches, salads, baked goods and pastries. Hettle created coffee and refresher drinks, but there is also an option to build your own. They carry a wide variety of syrups, bases, milks and add-ons to choose from.
“We have lots of sugar-free options, because that’s what we were asked for,” Hettle said, “We’re definitely trying to cater to people’s wants.”
Before they opened, Hettle and Bobbs asked the community what they wanted to see in the store. Overwhelmingly, people requested sugar-free options, gluten-free options and all-around healthier, cleaner ingredients.
“Our pastries are authentic to Italy,” Bobbs said. “They come from Italy; we bake them fresh every morning.”
Hettle and Bobbs also are working with local businesses. Their honey and tea are from local businesses, plus some local vendors have items for purchase in the store. There are car air fresheners, crocheted items and more.
The coffee beans are from Brown County coffee, which gets beans from all around the world. The beans are roasted on Wednesdays, packaged on Thursdays and arrive at Hoosier Bloom on Fridays.

“I just know our beans are amazing,” Hettle said.
“I’d say we have the freshest beans in town,” Bobbs said.
Hoosier Bloom & Pastry is open 6 a.m.- 3 p.m. Mondays through Fridays, 6 a.m.- noon on Saturdays and they are closed on Sundays.
